You and your students may choose to keep a journal that focuses on the students' ideas about various topics of interest. At the beginning, the teacher may have to do the writing while the student tells the story. Make this a component of each lesson. Journal entries can be shared as agreed to by the students and teacher.
Reciprocal journal writing is also a good teaching/learning activity. In this case, the students write a journal entry to which the teacher responds in writing, perhaps asking questions about what has been expressed.
